Created by John Taylor of Trenton, New Jersey in 1856, originally marketed as 'Taylor's Prepared Ham.' When pure food laws barred the 'ham' label, it was renamed 'pork roll.' North Jersey kept calling it Taylor ham; South/Central Jersey adopted 'pork roll.' The divide persists.
