Created in Jewish immigrant neighborhoods of New York City in the late 19th or early 20th century. The origin of the name is debated — some say it comes from Yiddish 'echt keem' (genuine foam), others from 'a cream' mispronounced. Fox's U-Bet syrup became the canonical ingredient.
